FREE + ONLINE | balay (Home) Cooking Demos: Kimchi Kinilaw with Chef AC
This month, Kapwa Gardens is partnering with Balay Kreative and SOMCAN to host Balay (Home) Cooking, a FREE online demo series which showcases a new guest chef and healthy Filipino dish every month that viewers can recreate from home!
Join us from the comfort (and safety) of home.
We invite you to tune in and follow along to the April edition of Balay (Home) Cooking, which features Chef AC Boral, the mastermind behind Baba’s House Kitchen, an up-and-coming rice bowl eatery in Oakland! Streaming from Kapwa Gardens, he’ll be teaching us how to make Kimchi Kilawin!
With safety in mind, this event will be streamed live to a remote audience via Zoom. Follow along and cook from your kitchen, or, simply watch and learn!
ABOUT THE DISH
Kimchi Kilawin is a fusion twist to the traditional Filipino dish. Kinilaw is a fresh and tangy raw seafood dish native to the Philippines, which uses vinegar and fruit juices to “cook” its ingredients, often comparable to ceviche. Here, Chef AC will prepare a variation of this dish called kilawin. The primary difference between “kinilaw” and “kilawin” is that kilawin can be cooked, while kinilaw is “cooked” by curing in acidic ingredients. No kinilaw or kilawin looks the same. Traditionally, it is composed of the local catch specific to one’s region, with varying add-ons and garnishes. Though, here, Chef AC turns to the popular Korean ingredient of kimchi, fermented and seasoned cabbage, as a standout feature of this recipe.
To RSVP and learn more about the event, chef, and recipe, please visit the official event page from Balay Kreative.
Full instructions and ingredients are also provided for your convenience.
Happy cooking, we’ll we hope to see you there!

ABOUT THE EVENT
A Twist On A Filipino Classic.
Adobo is quintessential Filipino food. A unique flavor profile of soy sauce, garlic, vinegar, and bay leaves makes a unique sauce that is packed with umami. Every Filipino household has its own take on the base recipe, both at here and at home. In the Southern Philippines, for one, it is common to add coconut milk to the Adobo’s base, while, in the Bay Area, several Filipino Chefs also add their own twist.
6 chefs take a unique spin on the national dish of the Philippines.
Not Your Mama’s Adobo is a food tour event that showcases the spectacular takes of featured chefs on the classic dish. With our passport tickets, you will have the special opportunity to dine on unique courses of Adobo like you’ve never tasted before, and explore other sweet and savory items.
